Cuppie Cake!

Greetings people! :)))) 

 So, i baked cupcakes ytsd. Specially baked it for Novina, another intern in the company. It's her last day tmrw already & it would be the last time seeing her today :( I'll be the only intern left after tmrw :'''''''( 

Went to Phoon Huat after work to get some baking stuffs. & i bought the cutest cupcake casing ever! It's pink with ribbon prints. I really like it.

 Baked 3 different flavors, Oreo, nuts & raisins! Wanted to bake bananas but i ran out of them boohoooooo........ Jon helped me with some of the baking because he had a nights out, BUT I DID MOST :b




He wanted me to snap this photo of the dishes he had washed after baking. Haha. I bake, he wash! :b

Side note.. You know i really love baking & i remember i used to bake every single week w/o fail during those secondary school days & miss those days where i baked tons & tons of cookies with Samantha for a friend's birthday. My dream job was to be a baker and set up my own bakery. Haha suddenly this reminded me of this "shake leg cafe" name given by my friends. Honestly, i did thought of setting up an online bakery shop but the lack of confidence didn't allow me to. Some more my piping skills need to be improve soooo badly! Hahaha, it would really be good if i am able to set up my own bakery. But let's wait till my confidence level is higher & when my baking skills improve :B

    Here's the recipe

    OREO CUPCAKE
    250g self-raising flour
    125g butter, softened
    200g caster sugar
    2 eggs
    1 tsp vanilla extract
    180ml milk
    150g coarsely crushed Oreo cookies

    1. preheat oven to 160 degrees celsius.

    2. cream butter and sugar until light and fluffy. add eggs, one at a time, mixing well after each addition. add the vanilla extract. alternately add flour mixture and milk and beat until batter is smooth. fold in crushed cookies.

    3. spoon batter into cupcake cases, filling about 2/3 full. bake for 20-25 minutes or until a tester inserted into the centre comes out clean. remove from oven and cool.

    BUTTER CREAM FROSTING
    125g (4oz) butter
    1 1/2 cups icing sugar
    2 tablespoons milk

    1. Have butter and milk at room temperature.

    2. Place butter in small bowl of electric mixer and beat until butter is as white as possible.

    3. Gradually add about half the sifted icing sugar, beating constantly.

    4. Beat in the remaining icing sugar.

    5. Mixture should be smooth and easy to spread with a spatula.

    I used the same recipe for the rainbow cupcake as well, just that i didn't add the oreos.

    The oreo cupcakes tasted really good! But for the rainbow cupcake, it turned out a little sticky, not sure why though. Perhaps i didn't store it in a right way.
